Prepare and cook quinoa according to on pack cooking instructions.
Place pumpkin on a roasting tray with a drizzle of olive oil. Roast for 30 to 40 minutes until soft and cooked. Remove from oven, cool and mash with a fork.
Mix the cooked quinoa and mashed pumpkin with all remaining ingredients. Mix well. Shape into bite-sized balls and place on a lined baking tray.
Bake at 180oC for 30-45 minutes or until cooked through and starting to turn golden.
