In a large bowl, combine the zucchini with corn kernels, eggs and spring onions. Mix with a fork until well combined.
Add flour, Parmesan, lemon and seasonings to the zucchini mixture, mixing well.
Heat a large frying pan over medium heat and add oil. Form small patties with your hands and place into pan, cooking for 2 to 4 minutes until golden. Turn patties, taking care as they are fragile, and cook the other side. Remove to a paper towel lined plate and keep warm whilst repeating with remaining mixture.
Serve patties with sour cream, chilli jam and coriander.
Substitute chilli jam for onion jam or guacamole.
