Gluten Free Coconut Pikelets

For serving:

Step 1

Whisk together the eggs, milk, sugar and vanilla. Add coconut flour, almond meal and baking powder. Whisk until well combined.

Step 2

Heat frying pan over medium-low heat and oil lightly. Add tablespoon measures of batter and cook several minutes until bubbles start appearing. Turn over to cook the other side a further minute. Repeat with remaining batter whilst keeping pikelets warm. Serve pikelets with a dollop of yoghurt and fresh blueberries.
