Vegan Green Split Pea Dhal with Cauliflower Rice

Directions
Step 1

In a medium saucepan over low-medium heat, add the olive oil and onion and saute for 3 minutes until the onion begins to golden.

Step 2

Add the ginger and chilli and saute for another 2 minutes.

Step 3

Next, add the ground turmeric and coriander and saute for a further minute until aromatic.

Step 4

Add the split peas, coconut milk, salt and pepper, stirring to combine.

Step 5

Cook for 20-25 minutes, until the split peas are soft and ready. If more liquid is needed, add water as necessary.

Step 6

Just before the dhal is finished, heat the cauliflower rice in a frying pan with a drizzle of olive oil. Season with salt and pepper.

Step 7

Stir the spinach through the dhal to wilt it.

Step 8

Serve the dhal alongside the cauliflower rice.

Ingredients
  • 3 tsp olive oil (extra virgin)
  • 3/4 onion (brown), diced
  • 3 tsp ginger (fresh), finely chopped
  • 3/4 chilli (red), finely chopped
  • 1 1/2 tsp turmeric (ground or fresh)
  • 3/4 tsp coriander (ground)
  • 1 cup, rinsed McKenzie's Green Split Peas
  • 2 cups coconut milk (from carton)
  • salt and pepper to taste
  • 3 tsp olive oil (extra virgin)
  • 4 1/2 cups cauliflower, blitzed into rice consistency
  • 3 cups baby spinach, roughly chopped
