Vegan Berry Coconut Popsicles

Step 1

Combine strawberries, blueberries, and raspberries with sugar and cardamom in a small saucepan. Cook over low heat, stirring regularly, for 5-7 minutes, until berries are soft and falling apart.

Step 2

Remove from heat and add desiccated coconut. Cool slightly. Stir in coconut milk. Carefully pour warm berry mixture into a pitcher. Pour mix into molds. Freeze at least 4 hours (insert sticks after a few hours when partially frozen).

Freeze for up to 1 month.
