In a heavy based pot with a lid, heat oil, add onion and garlic and cook gently with lid on low-med heat for approx. 10 minutes. This will soften the garlic and onion without burning it. Once the onion is soft, add paprika, honey and oregano and cook with the lid off for another minute.
Add the three bean mix and toss to heat through for another minute.
Put bean mixture into a blender/ food processor with 1/3 cup vegetable stock and feta cheese and process til smooth. Season with salt and pepper and serve.
Garnish with a swirl of olive oil, a sprinkle of chilli flakes and some sprigs of rosemary
