In a large bowl, add the lightly mashed three bean mix, grated zucchini, carrot and cheese. Mix to combine.
Add flour, breadcrumbs, eggs and seasonings and mix until well combined.
Take a large handful of mixture and form into a patty, set aside on a plate. Make 10 fritters, then coat each one in breadcrumbs and allow to set in fridge for 10 minutes.
In a large non-stick saucepan, heat oil on medium heat. Place fritters in pan and cook for 4-5 minutes on each side until golden and crispy. Transfer to a plate lined with paper towel, Serve with sauce of choice.
Garnish with dill or another herb of choice.
