Prepare beans to pack directions and set aside. Meanwhile, heat the oil in a large frying pan and cook the onion and garlic until tender. Place into the pot of a slow cooker with the ham hock, wine, stock, water, tomatoes, carrots, cumin, paprika and thyme. Mix ingredients well.
Place lid on slow cooker pot and cook on HIGH for 3 hours. Add prepared beans and cook a further hour until ham is tender and falls off the bone. Season to taste.
Serve sprinkled with parsley and thick cut sourdough toast.
