Place onion and garlic into large saucepan with a splash of olive oil and simmer for 5 minutes.
Once onions and garlic are soft, add boiling hot water. Add lentils, sweet potato, carrots and pumpkin and cover pot with lid (making sure that all ingredients are immersed in water).
Cook on a slow simmer until vegetables and lentils are soft for approximately 40 minutes.
When cooked, season and remove from stove top. Blend until smooth and creamy. Serve with fresh crusty bread and enjoy.
