Pre-heat oven to 160°C (fan forced). Grease and line a 16x25cm slice tin with baking paper.
Place the coconut oil, honey and peanut butter into a large microwave-safe bowl and heat until melted, stir.
Add the cinnamon, vanilla extract, salt and brown sugar to the melted mixture. Stir together until combined.
Add the oats, coconut, fruits and nuts, flour and puffed rice. Stir to combine.
Press the mixture firmly into a prepared baking tin and bake for 20-25 minutes until just golden.
Allow the slice to cool completely before cutting into slices.
To cut perfectly neat slices, place the slice in the fridge for several hours (preferably overnight) before cutting.
