Moroccan Lentil Soup

Directions
Step 1

Prepare lentil soup mix according to on-pack preparation instructions.

Step 2

Heat the oil in a large pot and add onion and garlic, cooking until onion is tender. Stir in spices and cook arnfurther minute. Add tomato paste, and mix through, cooking whilst stirring for 1 minute.

Step 3

Add stock, tomatoes, lentils, carrot, zucchini, beans and capsicum. Bring to the boil, reduce heat and simmerrnfor 20 minutes until vegetables and lentils are tender.

Step 4

Stir in coriander, season to taste and serve soup with yoghurt and extra coriander.

Ingredients
  • 2 tsp olive oil
  • 1 onion, finely diced
  • 2-3 garlic cloves, finely chopped
  • 1 tbs Clive Of India Authentic Curry Powder
  • 1 tsp ground cumin
  • 1 cinnamon stick
  • 1 tbs tomato paste
  • 1 litre vegetable stock
  • 400g can chopped tomatoes
  • 1 cup McKenzie's Lentil Soup Mix
  • 2 carrots, diced
  • 1 zucchini, sliced
  • 100g green beans, cut into 3cm lengths
  • 1/2 red capsicum, finely diced
  • to taste McKenzie's Australian Natural Sea Salt Grinder
  • to taste McKenzie's Whole Black Peppercorn Grinder
  • 1/2 cup coriander leaves, roughly chopped
  • Yoghurt, for serving
