Prepare lentil soup mix according to on-pack preparation instructions.
Heat the oil in a large pot and add onion and garlic, cooking until onion is tender. Stir in spices and cook arnfurther minute. Add tomato paste, and mix through, cooking whilst stirring for 1 minute.
Add stock, tomatoes, lentils, carrot, zucchini, beans and capsicum. Bring to the boil, reduce heat and simmerrnfor 20 minutes until vegetables and lentils are tender.
Stir in coriander, season to taste and serve soup with yoghurt and extra coriander.
