Directions
Step 1

Combine yoghurt, cumin, lemon, salt and pepper to make a dressing. Place dressing on the bottom of the jar.

Step 2

Layer remaining ingredients starting with cooked beans, then capsicum, avocado, corn, onion, spinach and coriander.

Step 3

When ready to eat, pour out into a bowl, mix and enjoy.

Tips

  • 1/2 cup of cooked McKenzie’s White Quinoa can also be added for add texture of nutrition.

Ingredients
  • 1 mason jar (approx. 450ml capacity)
  • 1/2 cup natural yoghurt
  • 1/2 tsp cumin powder
  • 1/2 lemon, juiced
  • To taste, McKenzie's Natural Salt & Pepper
  • 100g McKenzie's Black Beans, cooked
  • 1/2 red capsicum, chopped
  • 1/2 avocado, chopped
  • 1/2 cup corn kernals
  • 1/2 red onion, finely diced
  • 60g spinach
  • 1/4 cup fresh coriander, chopped
