Before cooking, follow on-pack instructions to rinse and pick over uncooked lentils. Cook lentils according to on pack instructions.
Combine olive oil, lemon juice, seeded mustard, crushed garlic, salt and pepper. Pour over warm cooked lentils and lightly toss.
In a serving bowl, combine the dressed cooked lentils with the baby beets, red onion, parsley and coriander.rnTop with crumbled feta. Serve either warm or cold.
