Before cooking, follow on-pack instructions to rinse and pick over uncooked beans.
In a large pot, heat oil over medium heat, add onion, garlic, celery, carrot and thyme. Cook and stir occasionally until vegetables are softened, 8-10 minutes.
Add the Five Bean mix, vegetable stock, water and tomatoes to the pot. Bring to the boil and then reduce heat to a medium-low simmer for 60 minutes or until beans are cooked.
Season with salt and pepper, to taste.
Serve in bowls sprinkled with parsley and parmesan, if desired.
