Preheat oven to 160C. Grease a 20x20cm slice pan and line with baking paper.
Mix butter and lemon rind in a large bowl.
Add caster sugar, almond meal, eggs, flour and coconut. Stir to combine.
Press evenly over base of slice pan. Cook for 20 minutes or until lightly browned.
To make topping, stir caster sugar and lemon juice in a small saucepan over low heat until sugar is completely dissolved.
Pour topping evenly over baked slice while still warm. Cool in pan.
Optional: Sift icing sugar over the top. Cut into squares to serve.
