Gluten Free Lemon Butter Squares

Topping

Step 1

Preheat oven to 160°C. Grease a 20x20cm slice pan and line with baking paper. Mix butter and lemon rind in a large bowl. Add caster sugar, almond flour, eggs, flour and coconut. Stir to combine.

Step 2

Press evenly over base of slice pan. Cook for 20 minutes or until lightly browned.

Step 3

To make topping, stir caster sugar and lemon juice in a small saucepan over low heat until sugar is completely dissolved.

Step 4

Pour topping evenly over baked slice while still warm. Cool in pan. Optional: Sift icing sugar over the top. Cut into squares to serve.
