Prepare chick peas according to pack directions, until well cooked.
Meanwhile, put the nuts into the food processor and blend until coarse. Add dates and blend again. Remove from the food processor.
Place chick peas (can be warm or cooled) into a food processor with 3 tbs water, honey and vanilla and puree to a smooth paste.
Add nut and date mixture back into food processor with remaining ingredients and blend until combined. Mixture should combine to form balls easily.
Roll mixture into balls approximately the size of a walnut. Balls can be rolled into extra shredded coconut or alternatively, fine desiccated coconut. Place in an airtight container and store in the fridge or freezer.
