Preheat oven 180ºC fan forced. Spray a quiche dish or a slice tin with cooking spray and set aside.
In a large bowl, whisk together eggs, milk, parmesan and black pepper. Then add the feta cheese. Stir gently and set aside.
In a non-stick frypan, heat oil and gently cook shallots and garlic for 3 minutes until they are soft, but not browned. Add the spinach and cook for 2 minutes until just wilted. Add the cannellini beans and heat through for a further 2 minutes.
Add the bean mix to the egg mixture in the bowl and immediately pour into the prepared quiche dish or slice tin. Sprinkle on top with extra parmesan or tasty cheese.
Bake in the oven for 35-40 minutes until the eggs are set in the middle and lightly browned on top. Carefully remove from the oven and allow to cool.
Garnish with fresh basil and slice to serve.
