Banana Coconut Muffins

Directions
Step 1

Preheat oven to 180oC and grease a 12-hole muffin pan.

Step 2

Process butter, caster sugar, banana, eggs and vanilla in a food processor until well combined.

Step 3

Place flour, baking powder, coconut and chocolate in a large bowl, then fold in banana mixture. Place spoonfuls into the muffin pan.

Step 4

Bake for 15 - 20 minutes or until risen and golden. Cool slightly in the pan, then turn out onto a rack to cool completely. Serve dusted with icing sugar.

Tips

  • For added impact, once cooked, brush melted butter on the top of each muffin and dip into McKenzie’s Toasted Desiccated Coconut.

Ingredients
  • 125g unsalted butter
  • 3/4 cup caster sugar
  • 3 ripe bananas, roughly chopped
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups plain flour
  • 4 tsps McKenzie's Baking Powder
  • 1 cup McKenzie's Fine Desiccated Coconut
  • 1/2 cup dark chocolate chips (optional)
  • To dust, icing sugar
