Baked Chicken with White Beans & Chorizo

Directions
Step 1

Pre-cook beans to pack directions, set aside.

Step 2

Heat 1/2 tablespoon of oil in a heavy based pan. Sear each side of chicken until golden. Set aside.

Step 3

Heat remaining oil in pan and cook the onions, chorizo and garlic for 3-4 minutes. Stir in the tomatoes, water and beans. Simmer for 5 minutes and season well.

Step 4

Transfer tomato mixture to a baking dish and nestle the chicken pieces on top. Bake at 180oC for 25-30 minutes until chicken is cooked through. Serve with green vegetables.

Tips

  • Cut up a whole chicken if preferred and sear each portion as per the thighs. Alternatively use a mixture of thighs and drumsticks.

Ingredients
  • 3/4 cup McKenzie's White Beans
  • 1 1/2 tbsp olive oil
  • 8 chicken thighs, skin on and on the bone
  • 1 onion, finely sliced
  • 120g chorizo, sliced
  • 2-3 garlic cloves, finely chopped
  • 400g can chopped tomatoes
  • 3/4 cup water
  • To taste, McKenzie's Australian Natural Sea Salt Grinder
  • To taste, McKenzie's Whole Black Peppercorn Grinder
  • For serving, Green Vegetables
