Mango, Macadamia & White Chocolate Cookies
Step 1
Preheat oven to 160ºC (fan forced) and line a baking tray with baking paper. In a medium size bowl, whisk together the plain flour and baking powder, set aside.
Step 2
In the bowl of an electric mixer, cream together the soft butter and sugar until light and fluffy about 4-5 minutes. Add condensed milk and vanilla and continue to beat for another minute. Add flour to the bowl and mix with a wooden spoon to form a soft dough. Fold in the nuts, chocolate chips and mango bitz until combined.
Step 3
Roll cookie dough into large walnut size balls (~50g each) and place on baking tray about 5cm apart. Bake in the centre of the oven for 12-15 minutes until the edges are golden and the middle still slightly pale. Leave the cookies on the tray to cool for 5 minutes before transferring them to a wire rack to cool completely.
