Christmas treat for kids or use dried figs, cranberries and pineapple for a more adult version of White Christmas.
Combine rice bubbles, coconut, icing sugar, powdered milk and dried fruit in a large mixing bowl.
Pour melted and cooled copha into dried ingredients and mix well.
Press the mixture into a lined 30cm x 20cm lamington tin and refrigerate overnight.
Serve cut into squares and lightly dusted with icing sugar. Enjoy.
