Step 1
In the bowl of an electric mixer, add the cream, icing sugar, cream stabiliser, fine coconut and vanilla. Beat for 3 minutes until firm peaks form.
Step 2
Arrange the bread slices on the board in a diamond shape. Spread the whipped cream over each of the bread slices.
Step 3
Arrange three strawberries in the centre of the bread. Face each strawberry tip to the top of the diamond shape. Place a slice of bread with cream over the strawberries and gently press down.
Step 4
To ensure a clean cut, wrap in clingfilm and refrigerate for 30 mins. Slice into 2 triangle shapes.
