Red Onion & Green Pea Fritters

Step 1

Prepare green split peas according to packet directions. Combine the peas, zucchini, onion, garlic, coriander, chilli, mint and lemon juice in a large bowl. Sift over flour and curry powder and toss to combine.

Step 2

Add the egg and stir until just combined. Season with salt and pepper. Divide mixture into 16 patties and refrigerate for 15 minutes.

Step 3

Heat oil in a frying pan over medium heat. Add half the fritters and shallow fry for 3 minutes each side or until golden brown. Transfer to a plate lined with paper towel. Repeat with remaining fritters, reheating oil if necessary. Arrange on a platter and serve immediately with natural yoghurt & naan bread.

Use these patties in a wrap as a substitute for meat or falafels.

Yellow Split Peas or crushed Chick Peas can be used instead of Green Split Peas.
