Coconut & Lime Ice Cream

1/4 cup McKenzie's Fine Desiccated Coconut 1^1/2 tbs grated lime zest 2 tbs lime juice 1/3 cup coconut milk powder 1L vanilla ice-cream, softened Biscotti to serve

Step 1

Mix coconut, zest, juice and powder in a bowl. Place ice-cream in a large bowl. Add coconut mixture to ice cream mixture and stir to combine. Transfer to a plastic container and freeze for at least 4 hours until firm.
