Step 1
Combine plain flour and McKenzie’s Baking Powder in a bowl. Rub in the cold butter until the mixture resembles breadcrumbs.
Step 2
Stir through grated cheese and chopped pickles. Gradually add pickle juice, mixing until the dough just comes together. Add a splash of water if needed. Lightly shape the dough, then cut into rounds or wedges.
Step 3
Air fry at 180°C for 10–12 minutes, or until golden and cooked through.
Step 4
Make the Vegemite Butter: Soften butter at room temperature. Mix through a small amount of Vegemite at a time until it is to your taste. Stir until smooth and spreadable.
- Drain pickles well so the dough doesn’t become too wet.
- Don’t overmix the dough — keeping it light helps the scones stay fluffy.
- Serve warm with extra cheese, pickles or hot honey for a trending flavour twist.
