Heat oil in a large saucepan, add leek and garlic, cooking over a low heat for 5 minutes. Add carrot and celery, cook a further 5 minutes.
Add stock, water and soup mix to pot. Bring to the boil, reduce heat and simmer for 30-35 minutes or until soup mix is tender.
Add chicken, parsley and lemon juice to pot. Cook a further 5 minutes and season to taste.
