Step 1

Place chick peas in 3 cups of boiling water and simmer for approximately 45 minutes or until tender.

Step 2

Meanwhile, place pumpkin on a lined baking tray. Coat with oil and roast at 180oC for 25 minutes or until golden.

Step 3

Place roasted pumpkin, cooked chickpeas, tahini, lemon juice, ground cumin, garlic clove, oil and water in a food processor. Season to taste. Process until smooth and stir in or garnish with coriander.

Preparation time excludes overnight pea soaking.

For a runnier consistency, add more water as desired.
