Pork and Mung Bean Burgers

Pork and Mung Bean Burgers

Step 1

Cook mung beans in 3 cups water for 25–30 minutes until tender. Drain and cool.

Step 2

Mash half the beans, leaving the rest whole. Mix with pork, tofu, 1 egg, garlic, ginger, soy sauce, scallions, panko, salt, and pepper (If the mixture feels too wet, add a little more panko until it holds together.) Beat the remaining 2 eggs in a bowl. 

Step 3

Shape mixture into patties (about 5 cm wide, 1 cm thick). Dip patties in beaten egg to coat.

Step 4

Heat oil in a skillet over medium heat. Fry patties in batches, 2–3 mins per side until golden. Drain on paper towels and serve hot.
