Mix together all dry ingredients then add the eggs and milk.
Whisk together well until all ingredients are blended and no lumps are visible.
Spray a non-stick pan with cooking spray and heat over low-medium heat.
Drop one quarter cup of batter into the pan and cook until bubbles form on top (about 2-3 minutes). Carefully flip pancakes and continue to cook on the other side until done (about 1 minute).
Top with your favourite sauce or toppings.
