Directions
Step 1

Preheat oven to 150oC. Line two trays with baking paper.

Step 2

Using an electric beater, beat the butter and sugar in a bowl until pale and creamy. Mix in vanilla essence.

Step 3

Slowly add the flours, beating on low speed until almost combined. Use your hands to bring the dough together. Transfer to a floured surface and knead gently until smooth.

Step 4

Gently roll out to 1cm thickness. Cut out desired shape and carefully lift onto tray.

Step 5

Bake for 20 minutes or until lightly golden.

Ingredients
  • 250g butter, at room temperature
  • 1/2 cup caster sugar
  • 1 tsp vanilla essence
  • 2 cups gluten-free plain flour, sifted
  • 1/2 cup McKenzie's Rice Flour, sifted
