Five Bean Chilli Con Carne

Step 1
Prepare and cook Five Bean mix according to on pack instructions. Drain and set aside. Heat the oil in a large pot over med-high heat and sauté the onions, capsicum and garlic for 5 minutes or until softened. Add the beef mince and brown quickly for 5-6 minutes then add the spices and cook a further 2 minutes until fragrant.
Step 2
Reduce the heat and stir through the stock cube mixed with water, tomatoes and tomato paste, cover and simmer gently for 20 minutes. Add the cooked Five Bean mix and corn kernels and cook a further 10 minutes with the lid off. Stir through the sugar and season to taste with salt and pepper.
Step 3
Serve topped with some fresh coriander and slices of chilli.
Speed up the prep and cook time by cooking beans the night before!
Serve with sour cream, corn chips or rice for a delicious alternative.
For a vegetarian version, omit the mince meat and replace with an extra cup of cooked five bean mix and replace beef stock with one teaspoon of powdered vegetable stock.
