Easter Nest Cake

Directions
Step 1

Preheat oven to 160oC (350oF). Grease and flour 24x8cm bundt pan and set aside.

Step 2

In a large bowl, combine sugar, flour, cocoa, bi-carb soda, baking powder and salt.

Step 3

Add eggs, buttermilk, melted butter and vanilla extract. Beat, using a hand mixer, on medium speed for 2 minutes.

Step 4

Stir in boiling water and mix until fully incorporated.

Step 5

Pour batter into bundt pan and bake for 40-50 minutes or until an inserted skewer comes out clean.

Step 6

Cool on a wire rack before removing from pan.

Step 7

Drizzle melted chocolate and scatter chocolate shavings over the cake. Dust with cocoa powder.

Step 8

Arrange pretzel sticks in the centre of the cake and top with Easter eggs.

  • 2 cups sugar
  • 2 cups plain flour
  • 3/4 cup cocoa
  • 1 1/2 tsps McKenzie's Bi-Carb Soda
  • 1 1/2 tsps McKenzie's Baking Powder
  • 1/2 tsp McKenzie's Australian Natural Sea Salt
  • 3 eggs
  • 1 cup buttermilk
  • 3/4 cup butter, melted
  • 1 tbs vanilla extract
  • 1 cup boiling water
  • 100g dark cooking chocolate, melted
  • 50g dark cooking chocolate, shaved
  • 1/4 cup cocoa powder
  • 40g salted pretzel sticks
  • 15-20 mini chocolate eggs
