French Style Lentils & Spinach Base

Step 1

Rinse the lentils well under cold water. Add lentils and water or stock to a saucepan and simmer for 20–25 minutes, or until tender.

Step 2

Meanwhile, heat olive oil in a frying pan over medium heat. Cook onion and garlic until softened and fragrant. Add the cooked lentils and stir to combine.

Step 3

Add spinach and cook until wilted. Finish with vinegar or lemon juice, then season with salt and pepper to taste.

Step 4

Use the base to create three simple meals throughout the week:

  • Brekkie: Lentils, Spinach, Egg & Yoghurt Bowl 
  • Lunch: Lentil, Spinach & Yoghurt Wrap
  • Dinner: Lentil, Spinach & Feta Hand Pies

  • Swap spinach for kale or silverbeet depending on what you have on hand.
  • This base works well for grain bowls, toast toppers, soups or stuffed sweet potatoes.
  • Keeps well in the fridge for up to 4 days for easy meal prep.
