Gluten Free Shortbread

Step 1

Preheat oven to 160°C . Line two trays with baking paper. Using an electric beater, beat the butter and sugar in a bowl until pale and creamy. Mix in vanilla essence.

Step 2

Slowly add the flours, beating on low speed until almost combined. Use your hands to bring the dough together. Transfer to a floured surface and knead gently until smooth.

Step 3

Gently roll out to 1cm thickness. Cut out desired shape and carefully lift onto tray. Bake for 18-20 minutes or until lightly golden.
