Green Split Pea & Zucchini Fritters
To Serve:
Step 1
Rinse McKenzie’s Green Split Peas and place in a pot with 5 cups of water. Bring to the boil, then lower heat and simmer for 35 minutes or until peas are cooked through. Drain and set aside.
Step 2
In a large bowl, combine the grated zucchini, corn, eggs, spring onions, parsley and both cheeses. Whisk well with a fork. Add flour and seasonings to the mixture and mix well.
Step 3
Heat oil in a large frying pan over medium heat. Pour ¼ cup measurement of batter into the pan and cook for several minutes until golden. Turn fritters and cook a further 3-4 minutes until golden and cooked through. Keep fritters warm whilst the remainder of mixture is cooked. Add a little more oil to the pan for frying as needed.
Step 4
Serve fritters with sour cream and sweet chilli sauce.
