Delicious as an appetiser or a vegetarian main meal - just add some steamed rice.
Cut pumpkin into 2cm cubes.
Combine pumpkin, lentils, undrained tomatoes, curry sauce and water in large saucepan. Bring to boil, reduce heat to medium-low and simmer covered for 20 minutes, stirring occasionally or until pumpkin is tender.
Add spinach and cook for 1 minute or until spinach is wilted.
Stir in coriander (optional) and serve with crusty bread if desired.
