Directions
Step 1

Prepare and cook ancient grains to pack directions. Drain well and allow to cool.

Step 2

Combine the parsley, mint and spring onions, toss together well. Add tomatoes and cucumber with the cooked ancient grains. Mix well.

Step 3

Whisk together the lemon juice, oil and allspice if using, season well. Pour over salad and toss to combine.

Tips

  • If you have already pre-cooked the whole bag, you will need 1 ½ cups of the cooked grains for this recipe.

Ingredients
  • 1/2 cup Mckenzie's Ancient Grain Soup Mix
  • 3 cups flat leaf parsley, washed
  • 1/2 cup mint leaves, washed
  • 4 spring onions, sliced
  • 2 ripe tomatoes, finely diced
  • 1/2 telepgraph cucumber, peeled, seeds removed and diced
  • 1/4 cup lemon juice
  • 2 tbs olive oil
  • 1/8 of a tsp allspice, optional
  • Freshly ground black pepper & salt, to taste
