A gluten and dairy free tortilla.
In a medium sized mixing bowl, whisk together all the ingredients to form a wet batter without any lumps.
Lightly oil a small preheated fry pan over medium heat, and pour in just enough batter to coat the bottom of the pan, about 1/8 cup. You may need to pick up the pan and twirl it a bit - it should be very thin like a crepe, not thick like a pancake. Cook tortilla until the top begins to dry out and the bottom begins to brown in spots, about 3 minutes. Flip with a small spatula or kitchen tongs and cook until browned on the other side.
