Directions
Step 1

Prepare Pulse Plus mix to pack directions, by rinsing. Combine in a saucepan with 4 cups of water. Bring to the boil, reduce heat and gently simmer for 20-25 minutes until just tender. Drain and rinse well under cold water. Spread out on a tray and refrigerate until required.

Step 2

Combine cooked Pulse Plus mix, onion, cucumber, corn, capsicum, tomatoes and coriander in a large mixing bowl. Toss well. Mix in the combined oil, vinegar, cumin and sugar. Season well and toss to coat.

Step 3

Serve in bowls with sliced avocado, corn chips, dairy free sour cream and lime wedges.

Tips

  • Pulse Plus mix can be refrigerated overnight once cooked, ready to make up into the recipe the next day.

  • 350g McKenzie's Pulse Plus- Peas, Lentils + Brown Rice
  • 1 red onion, finely diced
  • 1 Lebanese cucumber, diced
  • 1/2 cup corn kernels
  • 1/2 red capsicum, diced
  • 1/2 punnet cherry tomatoes, chopped
  • 1/2 cup coriander leaves, chopped
  • 2 tbs olive oil
  • 1 tbs red wine vinegar
  • 1/2 tsp cumin
  • Pinch sugar
  • 2 avocados, sliced
  • Corn chips, dairy free sour cream and lime wedges, for serving
