A lovely accompaniment to lamb or seafood.
Add garlic cloves to lentils and prepare lentils as per packet directions.
In salted boiling water, cook risoni according to packet directions. Drain, then refresh under cold running water until cool. Transfer to a bowl and toss with 1 tablespoon of oil.
Add lentils, parsley, lemon zest and remaining olive oil. Mash garlic against the side of the bowl and mix through. Season with salt and pepper and half the goat's cheese. Toss to combine. Scatter with remaining cheese to serve.
