NB: this salad can be enjoyed over 4 days as long as its kept in an airtight container in the fridge
In a large salad bowl combine the beans with all the other salad ingredients and toss.
With a stick blender, add all the dressing ingredients to a tall container and blitz for 20-30 seconds until the dressing is creamy and emulsified.
Adjust the consistency with additional water if required, just carefully adding one more tablespoon of water at a time, until your desired consistency is achieved.
Adjust seasoning to taste with an extra pinch of salt, pepper, honey or vinegar if needed.
Toss dressing over the salad & mix well.
