Into a large pot, add the milk, coconut milk, rice, chickpeas, sultanas (if using), maple syrup, vanilla, spices and lemon zest. Stir well, gently bring to a boil then lower heat to a simmer and cook for 20 minutes.
Plate and serve with a cinnamon stick for decoration. Enjoy!
