Before cooking, follow on-pack instructions to rinse and pick over uncooked soup mix.
Heat the oil in a large pot and add onion and garlic, cooking until just tender.
Add carrot and celery to the pot and cook for 2 minutes. Add uncooked soup mix, tomatoes, stock and zucchini.
Bring to the boil and reduce to a simmer for approx. 25 minutes or until mix is just tender
Add baby spinach and stir through until just wilting. Season well with salt and pepper and serve. Add a dollop of sour cream, pesto and a sprinkling of chilli flakes if desired.
