Susan’s Red Lentil Salad Recipe
Abundant in Fibre, Iron and Protein.

| 2 cups | McKenzie's Red Lentils |
| 2 cups | chopped tomatoes |
| 1 cup | chopped parsley |
| 1/2 cup | chopped celery |
| 1/2 cup | chopped capsicum |
| 1/2 cup | spanish onion |
| 1/4 cup | lemon juice |
| 1 tablespoon | olive oil |
| Pepper and garlic | to taste |
| 6 large | lettuce leaves |
Directions
Step 1
Prepare the McKenzie's Red Lentils as directed on the pack.
Step 2
In a large bowl combine all of the ingredients except the
lettuce and mix thoroughly.
Step 3
Place in refrigerator until well chilled for about an hour.
Step 4
Spoon generous proportions of salad mix onto each lettuce leaf
