Susan’s Red Lentil Salad Recipe

Abundant in Fibre, Iron and Protein.

2 cups McKenzie's Red Lentils
2 cups chopped tomatoes
1 cup chopped parsley
1/2 cup chopped celery
1/2 cup chopped capsicum
1/2 cup spanish onion
1/4 cup lemon juice
1 tablespoon olive oil
Pepper and garlic to taste
6 large lettuce leaves
Directions
Step 1
Prepare the McKenzie's Red Lentils as directed on the pack.
Step 2
In a large bowl combine all of the ingredients except the lettuce and mix thoroughly.
Step 3
Place in refrigerator until well chilled for about an hour.
Step 4
Spoon generous proportions of salad mix onto each lettuce leaf
