Megan's Xmas Pikelets
Colourful green and red Xmas pikelets in the shape of Xmas decorations.

| 4 teaspoons | McKenzie's Cream of Tartar |
| 2 cups | flour |
| 5 tablespoons | sugar |
| 1 cup | milk |
| 1 tablespoon | cold water |
| 2 | eggs |
| 2 teaspoons | McKenzie's Bi-Carb Soda |
| A drop | or two red food colouring |
| A drop | or two green food colouring |
Directions
Step 1
Beat eggs with cold water, add milk then sugar and flour. Add McKenzie's Cream of Tartar and McKenzie's Bi-Carb Soda last, fold through.
Divide mixture add red colouring to one half and the green colouring to the second half, mix through and be careful not to over mix.
Step 2
Spray xmas cookie cutters with a little oil then put them onto grill or fry pan.
Gently ladle or spoon in small amounts of mixture into the cutter shapes ie xmas tree, stars.
Make sure to use both the red and green batters.
The batter will start to bubble slightly, when it has lots of little bubbles all over the mixture, gently using a knife to score around the edge of the cutter to release it so you can remove the cutter and flip over the pikelet, to brown the other side. It's a favourite with the kids. You can pipe icing onto the pikelets for decoration but they don't usually last that long.
Depending on the size of cutters you have as to how much mixture you will need but will make approx 24 pikelets.
