Terry's Ginger biscuits
I have been baking these for decades. Always a winner. We don't buy 'bought' biscuits, they are tasteless and lack texture. If we want a biscuit you have to bake it. Good basic rule for healthy living.
These are great for Christmas, much better than a ginger bread man!

| 1 teaspoon | McKenzie's Mixed Spice |
| 2 cups | self raising flour |
| 1 tablespoon | golden syrup |
| 1 | egg |
| 1 cup | sugar |
| 125g | butter |
| 1 teaspoon | McKenzie's Bi-Carb Soda |
| 3 teaspoons | McKenzie's Ground Ginger |
Directions
Step 1
Cream the butter and sugar, it needs to become lighter in colour and texture. Add the egg and beat it in too. Then with a warmed spoon dip it into the golden syrup and add it to the mix. Then add all the other ingredients.
You need to form the mixture into small balls no bigger than walnuts. To get a consistent size, I roll it out like a long sausage and then cut it into equal sections. These are then easily rolled into balls. The balls are then rolled in sugar.
Step 2
Set them out on a tray allowing space for them to spread. Cook for about 12 to 15 minutes in a moderate oven. Place on a cooling rack and make sure they have cooled down completely before storing away.
Step 3
Eat with a cup of tea, try and limit yourself to two.
