Festive Banana Cake with frosting

| 2/3 cup | vegetable oil |
| 1/2 teaspoon | McKenzie's Whole Cloves |
| 3/4 teaspoon | McKenzie's Ground Nutmeg |
| 1 1/2 teaspoons | McKenzie's Ground Cinnamon |
| 1 teaspoon | salt |
| 1 1/4 teaspoons | McKenzie's Bi-Carb Soda |
| 1 1/4 teaspoons | Ward's Baking Powder |
| 2 cups | sugar |
| 2 1/2 cups | plain flour |
| 2/3 cup | buttermilk |
| 1 1/4 cup | mashed bananas |
| 2 | eggs |
| FROSTING | |
| 2 | egg whites |
| 1 1/2 cups | brown sugar |
| 5 tablespoons | water |
| 1 teaspoon | vanilla essence |
Directions
Step 1
Pre-heat oven at 180 degrees celsius.
Step 2
In a large mixing bowl, sift together flour, sugar, Ward's Baking Powder, McKenzie's Bi-Carb Soda, salt, McKenzie's Ground Cinnamon, McKenzie's Ground Nutmeg and McKenzie's Whole Cloves (previously ground).
Step 3
Add oil, buttermilk and mashed bananas. Mix togther until all dry ingredients are wet.
Step 4
Beat on low speed for 2 minutes. Add the eggs and beat for a further 1 minute.
Step 5
Bake in 2 well greased 25cm cake tins for approximately 40 minutes or until skewer comes out clean. Let cool in tin for 5 minutes and then cool on wire rack.
Step 6
FROSTING:
Combine egg whites, brown sugar and water in a saucepan and mix over low heat stirring constantly. Remove from saucepan when sugar has disssolved and beat mixture with a beater at high speed for about 5 minutes or when mixture is thick enough to spread. Add vanilla essence whilst beating.
Step 7
For an extra special touch - top the cake with sliced banana and drizzle some melted chocolate along the top. Yummy!
