Red Lentil Dip - a quick and healthy dip

| 1 cup | McKenzie's Red Lentils |
| 2 cups | chicken stock |
| 1 | clove garlic |
| 1 | brown onion, roughly chopped |
| 1 teaspoon | McKenzie's Curry Powder |
| 1/2 cup | natural yoghurt |
| To taste | McKenzie's Australian Natural Sea Salt |
| To taste | McKenzie's Whole Black Peppercorns |
| 1 tablespoon | lemon juice |
| To serve | coriander, chopped |
Directions
Step 1
Place McKenzie's Red Lentils, stock, garlic, onion and McKenzie's Curry Powder in a saucepan and bring to boil.
Step 2
Simmer for 20 minutes or until lentils are soft. Puree using a stick blender or blender.
Step 3
Season with McKenzie's Australian Natural Sea Salt and McKenzie's Whole Black Peppercorns to taste. Stir through yoghurt and lemon juice.
Step 4
Serve topped with chopped coriander.
Step 5
Tips: If you have any liquid in the saucepan after the lentil mix has cooked, drain to avoid a runny dip consistency. Serve with crispy pappadums and mango chutney for a tasty Indian snack!
