Malaccan Devil curry

| 3 tablespoons | Clive Of India Authentic Hot Madras Curry Powder |
| 1 tablespoon | McKenzie's Ground Ginger |
| 1 tablespoon | garlic crushed |
| 3 | onions chopped |
| 1 tablespoon | oil |
| 1 tablespoon | soy sauce |
| 2 tablespoons | vinegar |
| 750g | lean pork cubed |
| 1/4 cup | water |
| 5cm | strip of lemon rind |
| 2 tablespoons | peanut butter |
Directions
Step 1
Marinate pork in vinegar and soy sauce for 1 hour.
Step 2
Heat oil and fry onions, garlic and McKenzie's Ground Ginger until soft. Add Clive Of India Authentic Hot Madras Curry Powder and cook, stirring, for 1 minute.
Step 3
Add pork with all remaining ingredients and simmer, uncovered for 30 minutes until tender and sauce is reduced. This curry should be quite dry. Serve Malaccan Devil with rice, sliced banana and Indian pickles.
