Pork Vindaloo
Pork Vindaloo curry

| 3 tablespoons | Clive Of India Authentic Curry Powder |
| 1 teaspoon | McKenzie's Ground Ginger |
| 1 tablespoon | garlic crushed |
| 1 | onion finely chopped |
| 500g | pork cubed |
| 3 tablespoons | oil |
| 1/2 cup | vinegar |
| 2 large | tomatoes chopped |
| 1 tablespoon | tomato paste |
Directions
Step 1
Heat oil and brown pork in batches. Add onion, garlic and McKenzie's Ground Ginger, fry gently until soft.
Step 2
Add Clive Of India Authentic Curry Powder and fry, stirring for 1 minute.
Step 3
Return pork with juices to pan with remaining ingredients, cover and simmer gently for 40 - 50 minutes, until pork is tender and sauce smooth.
Step 4
Serve Pork Vindaloo with rice, cucumber raita and pappadams.
